Happy World Vegan Day!


I’m not doing anything special to celebrate World Vegan Day, just being my usual vegan self. If you’re reading this and you’re not already vegan perhaps you might want to try eating vegan for the day. It doesn’t have to be today. It could be tomorrow. And then you could try it again the next day and the next day and the next day...and just don’t stop :)

On to food...last night I made a scrumptious pumpkin and chickpea stew for Halloween. It was simple and spicy comfort food and made use of my new toy.

I got this almost 2 weeks ago and I love it! I haven’t used the porridge function yet, but I love the slow cooker, rice cooker and most of all the steamer. Unfortunately it’s not possible to programme the slow cooker to start cooking at a specific time (only the rice cooker has this function) so it can’t switch on itself while I am at work. However I do have a husband who works at home and I have managed to programme him over the years to do simple tasks like this :)

We ate the stew with some steamed broccoli and some leftover potatoes which were sprinkled with salt, pepper, cumin and paprika and fried in a little olive oil. Yum!

And here is the recipe.

Spicy Pumpkin and Chickpea Stew
(makes 4 servings)

3 cups diced pumpkin
1 parsnip, diced
2 cups passata (I used one 500ml carton)
I cup cooked chickpeas
2 cloves garlic, minced
2 tbsps vegan stock powder
1 tbsp fresh ginger, grated
1 tsp cumin
½ tsp paprika
¼ tsp cinnamon
½ cup water
½ tsp chopped chillies*
Handful of fresh coriander, chopped

Throw everything but the coriander in the slow cooker and cook for 4 hours. Mix through the coriander at the end.


*I used these. They’re great if you are a little scared of fresh chillies like me!

Your new kitchen toy looks like a real time saver. I have a rice cooker...but to have all those functions in one machine seems like a great idea. Loved your comment about programming the hubby, btw - hehe. ;-)

That rice cooker looks really handy. And the stew looks extremely tasty - very warming in the colder weather.

I'm mostly veggie but I reckon I could go vegan for the day :-) I thought you might like to know about the 'mostly-but-not-quite' veggie bit as I see you've included me in your blogroll (cheers!) and it looks like most of the other links are either totally veggie or vegan. I'll mainly be blogging about veggie food as I'm interested in making dietary changes for health and ethical reasons - but sometimes non-veggie things may pop up. So if you wanted to remove me from the list on that basis, I would completely understand.

That stew looks wonderful, and your rice cooker/steamer/porridge maker/ slow cooker looks very awesome! Perfect for winter.

I have to say congrats on the programmed husband ! I have one too although it's quite inconvinient that he works outside of the home. Maybe I'll get that machine.

What did you serve your stew with (can't tell if it's plantains or potatoes). So many good things have chickpeas in them and, sadly, I'm allergic to chickpeas so I have to miss out.

Jen, no worries about your blog not being vegan. The list is just blogs I like…they don’t have to be entirely veggie for me to like them!

Midwest Vegan, it was potatoes we had with the stew. I am sure you could substitute beans for chickpeas in a lot of recipes. I have a kind of allergy to beans so I substitute chickpeas for beans pretty often!

*you should check out leith wholefood co-op at ace, west montgomery place. They supply cheap, organic basics and extra excitng things like handmade vegan soap. 300% cheaper than realfoods, plus they can take private orders. a vegan-lifeline in the city!

im from glasgow and on WVD the 13th note & mono used to do a half price day. Don't know if they still do.
